Every year our flockmaster turns a group of Shetland wether lambs out on to the Mendip Hills for an extra season.
As well as producing brilliant real mutton our sheep are part of the National Trust sward conservation and management
scheme on Crooks Peak and Doleberry Hill where they graze on the fine grasses and wild herbs around the Roman fort.

The specialized grazing comes through in the meat which is garnet coloured and has a deep, complex flavour.

Traditional accompaniments for mutton are caper sauce or onion sauce.
