A butterflied shoulder is off the bone, left flat
with deep cuts through the thickest parts to
allow the marinade to penetrate and to ensure
even cooking, not as we would present a
conventional shoulder, ie. rolled and tied.
The rub is in an olive oil base with dried herbs
that release fragrant oils during cooking,
they are: Marjoram, thyme, savoury, basil,
oregano, bay, sage, rosemary & lavender.
