Chuck Eye is the continuation of the forerib joint, towards the shoulder.
This cut makes really tasty steaks, slice and fry quickly in a hot
pan, best when still pink in the middle.
OR Braise the whole piece as a daube with red wine, vegetables,
garlic and herbs.
OR Slow roast with onion and root vegetables.
Chuck eye has a little bit of fat which adds to the delicious flavour.
